As the world pulls together during this Coronavirus pandemic, our LuxeOrganix team wanted to share what they are doing to stay healthy in all ways, hoping it might inspire and encourage you. Most of our team is working virtually from home these days. We asked everyone to contribute a few lines on what they’re doing while they’re under various quarantine orders.

We also share one of our favorite recipes. It’s easy to make, healthy, and soooo yummy! We’re sure those around your dinner table will enjoy it as much as we do.

We’re not scientists, but we’re optimistic the pandemic will pass and we’ll all be able to enjoy our favorite activities again soon.

Words of Encouragement From Our USA Family-Owned Company

We’ve been reaching out to neighbors who are more at risk to grab groceries or anything else they may need. Sharing helpful tips for navigating this “new normal” and recipes on Facebook Live has been a fun way to connect, inspire and be inspired.

One of my favorite shares is pizza night! I make this tasty dish without any of the guilt or bloating! Everyone who tries it LOVES IT.

Working from home has given me space and time to reflect about what’s important in my life and what I want to achieve when this lockdown is over.

I have been reunited with my love of music, At night and on the weekends I play for my neighbors and from our balconies we dance together. This has helped us to get to know each other and actually practice “loving thy neighbor!”

I feel when this is all over we will no longer be strangers on the street, and this is a beautiful thing. We may be doing “social distancing” but that does not mean we cannot be social!”

Almost nightly walks through the neighborhood have been essential. Nerf footballs were bought and delivered for the little ones — a trampoline, and an inflatable pool, too! Thankfully the new treadmill is STILL seeing regular use.

I take my dog, Thunder, for a run at the school instead of the dog park because no one is there. This makes it a win-win for both of us since the dog parks make it hard to keep social distancing in place.

I am helping my friends and family keep their stress in check by sharing a daily quarantine chuckle… Memes, funny jokes, song parodies – anything that elicits a giggle is fair game for a share.

I’m investing more time and effort in my mental health by reconceptualizing how I’ve done or seen things in the past using the Switch app. I am focusing on what IS in my control and using the rest to propel new thoughts and action (of which some is to just be still and let it go).

Embracing uncertainty, stress and problems with a solution-oriented mindset gives me confidence and helps me to expect that good will come from it.

ALL of these things are giving me an opportunity to gain wisdom, and to learn and grow, and are leading to new opportunities, which makes me excited and optimistic, even in the midst of all the craziness that is going on!

Matthew’s Friday Pizza Night Recipe

CHICKEN CRUST PARMESAN PIZZA
 

Ingredients

  • 10 oz ground chicken breast
  • 1 egg (or 3 Tbsp egg beaters)
  • 2 Tbsp grated parmesan cheese
  • 1/2 tsp Italian seasoning
  • Cooking spray
  • 1/4 cup no sugar added tomato sauce (such as Rao’s Homemade)
  • 1/4 cup reduced-fat shredded Mozzarella cheese
  • 2 plum tomatoes, sliced (or any sliced tomatoes will do!)
  • 2 Tbsp Pesto

Directions

    1. Preheat oven to 400 °F.  
    2. Make the crust by combing the first four ingredients in a medium-sized bowl. Form the mixture into a thin, circular crust shape on a parchment-lined, lightly greased baking sheet. Bake until golden, about 20 minutes.  
    3. Top the crust with pesto, then sauce, then cheese, and tomato slices. Bake until cheese is melted, about 7 to 10 minutes.  
    4. Cut into 4 pieces. Half of the pizza = 1 serving.
